So it was a very busy day here. We had to not only recover from a fun filled weekend, but we also did lots and lots of school.
Add to that school work and a fun nature themed project and well, you have the makings for a crazy day.
Last Friday Indiana did make an oatmeal cake though, and it was delicious!
It's a simple cake that uses ingredients you most likely have in the pantry.
It's always a big hit around here for dessert...and for breakfast!
I once heard my mother say it was okay to eat leftover oatmeal cake for breakfast because it had oatmeal in it. Works for me....
Here's a great cake recipe to start your week off! Enjoy!
Oatmeal Cake
1 1/2 C boiling water
1 cube butter
1 C oats
Combine these and let stand 10 minutes.
1 C sugar
1 C brown sugar
1 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
2 eggs
1 1/2 C flour
Mix all of this and then add oatmeal mixture. Mix well and bake in lightly greased pan 30-40 minutes at 350 degrees. Frost when cool.
Frosting:
1 cube butter
1/2 cup chopped pecans
1/4 cup milk
1 cup shredded coconut
3/4 cup brown sugar
Mix in small pot over med-low heat. Bring to a boil for 1 minute. Pour over cake and spread. Allow to cool.
